  • 1/2 teaspoon baking soda

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. In a large pot, bring 2 quarts of water to a boil. Add 2 tablespoons of kosher salt, baking soda, and potato chunks. Boil until tender, about 10 minutes.
  3. While potatoes are cooking, combine olive oil, minced garlic, chopped rosemary, and black pepper in a saucepan over medium heat until the garlic turns golden (about 3 minutes). Strain the mixture.
  4. Drain the potatoes and let them rest briefly to evaporate moisture. Toss them in the infused oil mixture until well coated.
  5. Spread the potatoes on a baking sheet without overcrowding them. Roast for about 20 minutes without moving them.
  6. After 20 minutes, turn the potatoes gently using a spatula and continue roasting until deep brown and crisp (30–40 minutes longer).
  7. Once finished, toss with reserved garlic and rosemary mixture plus minced parsley before serving hot.
