  • 1 packet active dry yeast (2¼ tsp)
  • ½ cup warm milk (110°F/43°C)
  • ¼ cup granulated sugar
  • ¼ cup unsalted butter, melted
  • 1 tsp salt
  • 1 large egg
  • 4 cups all-purpose flour

Instructions

  1. Dissolve yeast in warm milk with a pinch of sugar. Let sit until foamy (5–10 minutes).
  2. In a large bowl, combine mashed sweet potatoes, sugar, melted butter, egg, and salt. Mix well.
  3. Add the yeast mixture and about 3 cups of flour to form a soft dough; gradually add more flour as needed.
  4. Knead the dough on a floured surface for about 8–10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a towel, and let rise in a warm spot until doubled in size (about 1 hour).
  6. Punch down the risen dough and divide into 12–16 pieces. Shape into rolls and place in a greased baking dish.
  7. Cover again and let rise for another 30–45 minutes until puffy.
  8. Preheat oven to 375°F (190°C) and bake for 15–20 minutes until golden brown.
