  • 1 pound ground beef
  • 1 cup diced onion
  • 2 cups diced bell peppers (red, orange, or yellow)
  • 14.5 oz can petite diced tomatoes
  • 15 oz can tomato sauce
  • 3 cups water
  • 2 cups low sodium beef broth
  • 2/3 cup long grain white rice
  • ½ teaspoon dried parsley
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef and cook until browned.
  3. Stir in onions and garlic until softened.
  4. Add diced bell peppers, diced tomatoes, and tomato sauce to the pot.
  5. Pour in water and beef broth.
  6. Season with parsley, basil, oregano, black pepper, red pepper flakes, and insert the bay leaf. Mix well.
  7. Stir in the rice and bring the mixture to a boil.
  8. Reduce heat to low and cover; simmer for about 30 minutes until rice is tender.
  9. Remove bay leaf before serving hot.
