  • 150g boneless, skinless chicken breast, cut into cubes
  • 1 tsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp cayenne pepper (adjust to spice preference)
  • Salt & black pepper, to taste
  • 1 cup uncooked white rice
  • 1 cup water
  • Pinch of salt
  • 1 cup sliced cucumber
  • 1 cup cherry tomatoes, halved
  • 2 tbsp diced red onion
  • 1 tsp chopped fresh parsley or dill
  • Avocado, sliced
  • 1 tbsp spicy mayo (mayonnaise mixed with sriracha)

Instructions

  1. Rinse the rice until water runs clear. Combine with water and salt in a pot. Bring to a boil, reduce heat, cover, and cook for 12-15 minutes until fluffy.
  2. In a skillet, toss chicken cubes with olive oil and spices. Cook over medium-high heat for 6-8 minutes until golden and fully cooked.
  3. In a bowl, combine cucumber, tomatoes, red onion, parsley or dill, salt, and pepper. Toss gently.
  4. Assemble by adding rice to a serving bowl topped with chicken, salad, and avocado slices. Drizzle with spicy mayo before serving.
