- 2 slices whole grain or sourdough bread
- 1 ripe avocado
- 2 eggs
- 1/2 tsp chili crunch or chili crisp oil
- Salt and black pepper to taste
- Optional: Garlic powder, sesame seeds, everything bagel seasoning
- Bring a pot of water to boil. Gently add eggs and boil for 6-7 minutes for jammy yolks. Transfer to ice water to cool before peeling.
- While the eggs are boiling, toast the bread slices until golden brown.
- In a bowl, mash the avocado with salt and optional garlic powder.
- Spread the mashed avocado on the toasted bread, top with halved jammy eggs, drizzle with chili crunch oil, and season as desired.
