Ingredients

  • 2 slices whole grain or sourdough bread
  • 1 ripe avocado
  • 2 eggs
  • 1/2 tsp chili crunch or chili crisp oil
  • Salt and black pepper to taste
  • Optional: Garlic powder, sesame seeds, everything bagel seasoning

Instructions

  1. Bring a pot of water to boil. Gently add eggs and boil for 6-7 minutes for jammy yolks. Transfer to ice water to cool before peeling.
  2. While the eggs are boiling, toast the bread slices until golden brown.
  3. In a bowl, mash the avocado with salt and optional garlic powder.
  4. Spread the mashed avocado on the toasted bread, top with halved jammy eggs, drizzle with chili crunch oil, and season as desired.
