  • 1 (2-3 pound) sugar pumpkin, halved and seeded
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 8 ounces feta cheese, crumbled
  • 4 ounces cream cheese, softened
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1 tablespoon honey or maple syrup, optional
  • Pinch of red pepper flakes, optional
  • Pita bread, cut into wedges
  • Crudités: carrots, celery, cucumber, bell peppers
  • Crackers
  • Pomegranate seeds, optional for garnish
  • Fresh rosemary sprigs, optional for garnish
  • Drizzle of olive oil, optional for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Halve and seed the pumpkin, then place on a baking sheet lined with parchment paper.
  2. Drizzle with olive oil and sprinkle with salt, pepper, cinnamon, and nutmeg. Roast for 45-60 minutes until fork-tender.
  3. In a food processor, blend crumbled feta, softened cream cheese, olive oil, lemon juice, minced garlic, and optional sweetener until smooth.
  4. Add roasted pumpkin flesh to the food processor and blend until well combined. Adjust seasonings to taste.
  5. Chill for at least 30 minutes before serving. Garnish as desired.
