  • ½ cup (100 g) light brown sugar
  • 2 large eggs (room temperature)
  • 1¼ cup (325 g) canned pumpkin puree
  • 2 tsp (10 ml) vanilla extract
  • 4 oz. (113 g) cream cheese (room temperature)
  • 4 tbsp (57 g) unsalted butter (room temperature)
  • 1 tsp (5 ml) vanilla extract (for frosting)
  • 1 cup (125 g) powdered sugar
  • 13 tsp (515 ml) milk (as needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In one bowl, mix together dry ingredients: flour, baking soda, spices, and salt.
  3. In another bowl, whisk together wet ingredients: canola oil, sugars, eggs, pumpkin puree, and vanilla until smooth.
  4. Gradually combine dry mixture into wet mixture until just mixed.
  5. Pour batter into the prepared loaf pan and bake for about 55 minutes or until a toothpick comes out clean.
  6. While cooling, prepare the cream cheese frosting by beating together cream cheese and butter, then mixing in powdered sugar and vanilla.
  7. Frost cooled pumpkin bread generously before slicing.
