  • 10 tbsp unsalted butter
  • ¾ cup brown sugar (packed)
  • 1 egg + 1 egg yolk (room temperature)
  • 2 tsp vanilla extract
  • ¼ cup pistachio cream
  • ½ tsp salt
  • 1¼ cup all-purpose flour
  • 3.5 oz dark chocolate, chopped
  • ¼ cup chopped pistachios
  • Chopped pistachios (for topping)
  • 3 tbsp pistachio cream (for topping)

Instructions

  1. Preheat your oven to 350° F and prepare an 8×8 light-colored metal baking pan by lining it with parchment paper.
  2. In a mixing bowl, whisk together melted brown butter and brown sugar until well combined. Add the egg, egg yolk, vanilla extract, and pistachio cream; mix until smooth.
  3. In another bowl, combine salt and flour. Gradually integrate this dry mixture into the wet ingredients until just blended—be careful not to overmix.
  4. Gently fold in chopped chocolate and chopped pistachios using a spatula.
  5. Pour the batter into the prepared pan, sprinkle with reserved chocolate and additional pistachios, then bake for about 25 minutes or until golden brown.
  6. Allow to cool for 10 minutes before transferring to a wire rack to cool completely before cutting into squares.
