  • 1 tsp baking powder
  • 1 large ripe banana (mashed)
  • 1/2 cup natural peanut butter
  • 1/4 cup honey
  • 1 egg
  • 1 cup milk of choice
  • 12 banana slices for topping
  • Peanut butter for drizzling

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a muffin tin with non-stick spray.
  2. In a large bowl, mix rolled oats, salt, and baking powder.
  3. In another bowl, mash the banana and combine it with peanut butter and honey until smooth. Stir in the egg.
  4. Pour the wet mixture into the dry ingredients along with the milk; mix until combined.
  5. Scoop the mixture into the muffin tin, filling each cup three-quarters full. Bake for about 25 minutes until golden brown.
  6. Allow cooling slightly before removing from the tin. Top with banana slices and drizzle with peanut butter.
