  • 2 cups fresh spinach
  • 1 cup heavy cream
  • Salt

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery; sauté for about 5 minutes until softened.
  2. Stir in minced garlic, cooking for an additional minute, then add dried thyme and basil.
  3. Pour in chicken broth and bring to a boil. Reduce heat to simmer; add shredded chicken and gnocchi. Cook for 5-7 minutes until gnocchi float to the top.
  4. Stir in fresh spinach and heavy cream; cook for another 2-3 minutes. Season with salt and pepper to taste.
