  • 1/4 cup fresh lemon juice
  • 1/4 cup shredded coconut (plus extra for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. For the cookie dough, combine flour, powdered sugar, and cold butter in a mixing bowl. Blend until the mixture resembles coarse crumbs. Press this dough into the bottom of a greased baking sheet.
  3. For the filling, beat together eggs, granulated sugar, flour, and baking powder in another bowl. Gradually mix in fresh lemon juice and fold in shredded coconut.
  4. Pour the filling over the cookie base and bake for about 25–30 minutes or until set and lightly golden on top.
  5. Allow cooling completely before dusting with powdered sugar and adding extra shredded coconut.
