  • 2 ¼ tsp active dry yeast
  • 1 cup warm water (110°F / 45°C)
  • 2 tbsp olive oil
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • 1 ½ cups shredded mozzarella cheese (divided)
  • ½ cup grated Parmesan cheese

Instructions

  1. In a mixing bowl, combine warm water, sugar, and yeast. Let sit for 5–10 minutes until foamy.
  2. Stir in olive oil, salt, basil, oregano, thyme, and 1 cup flour; mix until combined. Gradually add the remaining flour until soft dough forms.
  3. Knead the dough for 6–8 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover with a towel, and let rise for about 1 hour or until doubled in size.
  5. Punch down the dough and knead in 1 cup mozzarella and Parmesan cheese.
  6. Shape into a loaf and place in a greased loaf pan; let rise again for about 30 minutes.
  7. Preheat oven to 375°F (190°C). Sprinkle the remaining mozzarella on top before baking.
  8. Bake for 25–30 minutes until golden brown and cheese is bubbly; check doneness by tapping on the bottom—should sound hollow.
  9. Cool slightly before slicing.
