  • 1 head Iceberg Lettuce
  • 1 head Romaine Lettuce
  • 1 pint Cherry Tomatoes
  • 1 English Cucumber
  • 8 ounces Fresh Mozzarella
  • 1/4 to 1/2 lb turkey slices
  • 4 ounces Provolone Cheese
  • 1 (14-ounce) can Chickpeas
  • 2 Tablespoons Pepperoncinis
  • 1/4 Red Onion (optional)
  • 1/2 cup Extra-Virgin Olive Oil
  • 1/4 cup apple vinegar
  • 1 Garlic Clove
  • 1/2 teaspoon Dried Oregano
  • 1/2 teaspoon Dijon Mustard
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper

Instructions

  1. Chop iceberg and romaine lettuce into bite-sized pieces.
  2. Dice cherry tomatoes, cucumber, mozzarella, provolone, and turkey slices.
  3. Finely chop pepperoncinis and slice red onion if using.
  4. Drain and rinse chickpeas; combine with olive oil and seasonings if desired.
  5. In a large mixing bowl, combine all prepared ingredients.
  6. In a separate bowl, whisk together the dressing ingredients: olive oil, apple vinegar, garlic, oregano, mustard, salt, and pepper.
  7. Pour dressing over salad just before serving and toss gently to coat.
