  • 1 pound ground turkey
  • 4 medium potatoes
  • 1 tablespoon olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh parsley

Instructions

  1. In a large skillet over medium heat, heat the olive oil.
  2. Peel and cube the potatoes into small pieces (about 1/2 inch). Add them to the skillet and cook for 8-10 minutes until golden brown.
  3. While potatoes are cooking, chop the onion and mince the garlic.
  4. Once potatoes are done, remove them from the skillet. Add onion and garlic to the same skillet and sauté for about 3-4 minutes until translucent.
  5. Add ground turkey to the skillet, breaking it into smaller pieces. Cook for 6-8 minutes until fully cooked.
  6. Stir in thyme, paprika, salt, and pepper.
  7. Return cooked potatoes to the skillet and pour in chicken broth. Stir well, reduce heat to low, cover, and simmer for about 5 minutes.
  8. Remove from heat and stir in parsley before serving.
