  • 2 boneless, skinless chicken breasts
  • 300g Brussels sprouts, halved
  • 1 tbsp olive oil
  • Juice of lemon
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper to taste
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup milk
  • 2 cloves garlic, minced
  • 1 cup grated Parmesan

Instructions

  1. Season chicken breasts with olive oil, garlic powder, onion powder, salt, pepper, and lemon juice. Grill over medium-high heat for 5-6 minutes per side until cooked through.
  2. Toss halved Brussels sprouts with olive oil, salt, and pepper. Spread on a baking sheet and roast at 200C (390F) for about 20 minutes until crispy.
  3. In a saucepan over medium heat, melt butter and stir in flour for about 1 minute. Gradually whisk in milk until smooth. Add minced garlic and simmer until thickened. Stir in grated Parmesan until the sauce is smooth.
  4. Slice grilled chicken and layer it with roasted Brussels sprouts in bowls. Drizzle with creamy sauce and garnish as desired.
