  • 450 g chicken breast
  • 200 g mushrooms
  • 600 g baby potatoes
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt & pepper to taste
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tsp dried Italian herbs
  • 1 tsp paprika
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, toss halved baby potatoes with olive oil, garlic powder, oregano, salt, and pepper until coated. Spread on a baking sheet.
  3. Roast the potatoes in the oven for 20–25 minutes until golden and crispy.
  4. While potatoes roast, heat olive oil in a skillet over medium-high heat. Cook seasoned chicken cubes until golden brown.
  5. Add minced garlic, sliced mushrooms, and diced bell pepper to the skillet. Sauté for an additional 5–6 minutes until vegetables are tender.
  6. Serve hot with freshly chopped parsley as garnish alongside roasted potatoes.
