  • 7 pounds apples (peeled and sliced)
  • 1 lemon (zested and juiced)
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup cornstarch
  • 1 tablespoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 6 cups water

Instructions

  1. Zest and juice the lemon; set aside.
  2. Peel and slice the apples into thick slices. Toss with lemon juice and zest.
  3. In a large pot, combine granulated sugar, brown sugar, cornstarch, cinnamon, salt, nutmeg, and water. Bring to a boil over medium-high heat while whisking. Boil for 2 minutes until thickened.
  4. Stir in apple slices and cover the pot. Reduce heat to low and simmer for 10 minutes until apples are slightly tender.
  5. Remove from heat and let cool covered for about 30-40 minutes.
  6. Ladle into freezer bags (approximately 2½ cups per bag) and freeze.
