Ingredients

  • 2 hard-boiled eggs
  • 1 cup cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1 tbsp fresh chives, chopped
  • Salt and freshly cracked black pepper to taste

Instructions

  1. Boil the eggs in water for 9-10 minutes until hard-boiled. Cool under cold water, peel, and slice in half.
  2. Slice the cucumber into thin rounds and halve the cherry tomatoes.
  3. In a shallow bowl, arrange cucumber slices around the edges. Place halved cherry tomatoes in the center and add egg halves on top.
  4. Sprinkle with chopped chives and season with salt and freshly cracked black pepper to taste. Serve immediately or chill for later.
