  • 23 boneless, skinless chicken breasts (or thighs)
  • 4 cups low-sodium chicken broth
  • 1 small yellow onion, finely chopped
  • 34 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1 (14.5 oz) can crushed tomatoes
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp cornstarch + 2 tbsp cold water (optional)
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Place raw chicken in the bottom of the crock pot. Add chopped onion, minced garlic, Italian seasoning, and crushed tomatoes.
  2. Pour low-sodium chicken broth over all ingredients.
  3. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  4. Remove cooked chicken and shred it before returning to the pot.
  5. Stir in heavy cream until well combined.
  6. For a thicker soup, mix cornstarch with cold water to create a slurry and stir into the soup.
  7. Gradually add grated Parmesan cheese while stirring until melted and incorporated.
  8. Cook uncovered on low for an additional 20–30 minutes to meld flavors.
  9. Season with salt and pepper to taste before serving hot.
