  • 1 7oz can of chipotle peppers in adobo sauce
  • 1/4 cup extra virgin olive oil
  • 1/4 cup apple cider vinegar
  • 1/4 cup honey
  • 8 cloves garlic
  • 1 bunch cilantro
  • Juice of ½ lime
  • 2 tsps chipotle powder
  • 1 tsp chili powder
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 2 tsps salt
  • 1/2 tsp pepper
  • Flank steak or sirloin

Instructions

  1. In a blender or food processor, blend the chipotle peppers, apple cider vinegar, honey, olive oil, lime juice, cilantro, garlic, cumin, chili powder, and salt until smooth.
  2. Place your steak in a large bowl and pour the marinade over it; reserve 1/4 cup for later.
  3. Allow the steak to marinate for at least 2 hours or overnight for best flavor.
  4. Preheat a skillet over high heat and sear the steak for about 3-4 minutes on each side until browned.
  5. Let the cooked steak rest briefly before slicing thinly against the grain.
  6. Return cubed steak to the skillet with reserved marinade and sauté briefly before serving.
