  • 1.5 lbs beef chuck (cut into cubes)
  • 2 tbsp vegetable oil
  • 1 large onion (sliced)
  • 4 garlic cloves (minced)
  • 1 tbsp fresh ginger (grated)
  • 2 tbsp red or yellow curry paste
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup beef broth
  • 1 cup jasmine rice
  • Garlic naan (for serving)

Instructions

  1. Season beef with salt and pepper. In a heavy-bottomed pot, heat vegetable oil over medium-high heat and sear beef until browned on all sides. Remove from pot.
  2. In the same pot, sauté onion until translucent, then add garlic and ginger; cook until fragrant.
  3. Stir in curry paste and turmeric; cook for about 2 minutes.
  4. Add coconut milk, broth, brown sugar, lime juice, and return beef to the pot.
  5. Simmer covered on low heat for about 2 hours until beef is tender.
  6. Prepare jasmine rice according to package instructions.
  7. Serve the curry over rice with warmed garlic naan.
