  • 4 tablespoons unsalted butter
  • 1 stalk celery (finely chopped)
  • 1 small onion (finely diced)
  • 10 ounces portabella mushrooms (sliced)
  • 1/4 cup all-purpose flour
  • 1 cup chicken stock
  • 1 cup whole milk
  • 2 cups cooked and chopped chicken breasts
  • 1 cup shredded cheddar cheese
  • 3/4 cup panko bread crumbs
  • 1/2 cup finely shredded Parmesan cheese

Instructions

  1. Cook the wild rice according to package instructions until slightly firm.
  2. Preheat the oven to 350°F (175°C).
  3. In a skillet, melt butter and sauté celery and onion until soft.
  4. Add mushrooms and cook until softened.
  5. Sprinkle flour over vegetables, then gradually stir in chicken stock and milk until thickened.
  6. Stir in cooked chicken and cheeses; season with salt and pepper.
  7. Combine with drained wild rice and transfer to a greased casserole dish.
  8. Top with a mixture of panko breadcrumbs, Parmesan cheese, and melted butter.
  9. Bake for 35–40 minutes until golden brown.
