  • 1 pound ground chicken
  • 1 cup finely chopped napa cabbage
  • 1/2 cup finely chopped green onions
  • 1/4 cup finely chopped shiitake mushrooms (optional)
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • 1/2 teaspoon sugar
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon salt (or to taste)
  • 2 tablespoons vegetable oil (or any neutral oil)
  • 1/2 cup water
  • 1/4 cup soy sauce (for dipping)
  • 2 tablespoons rice vinegar (for dipping)
  • 1 tablespoon sesame oil (for dipping)
  • 1 teaspoon chili garlic sauce (or more, to taste)
  • 1/2 teaspoon grated ginger (optional, for dipping)
  • 1 green onion, thinly sliced (optional, for dipping)

Instructions

  1. In a large bowl, whisk together flour and salt. Gradually add warm water, mixing until a shaggy dough forms.
  2. Knead on a floured surface for 8–10 minutes until smooth and elastic. Let the dough rest for at least 30 minutes.
  3. For the filling, combine ground chicken, napa cabbage, green onions, shiitake mushrooms (if using), soy sauce, rice vinegar, sesame oil, ginger, garlic, sugar, white pepper, and salt in another bowl.
  4. Mix all ingredients together until well combined. Be careful not to overmix.
  5. Taste the filling by frying a small amount and adjust seasonings as necessary.
  6. Divide the rested dough in half, keeping one half covered while you work with the other.
  7. Roll the dough into a long rope about 1 inch in diameter and cut into 20–25 pieces.
  8. Flatten each piece into small discs about 3 inches in diameter.
  9. Place about 1 tablespoon of filling in the center of each wrapper. Fold and seal firmly.
  10. Heat vegetable oil in a non-stick skillet over medium-high heat. Arrange potstickers in a single layer in the skillet.
  11. Cook for about 2–3 minutes until bottoms are golden brown and crispy.
  12. Carefully pour in water and cover the skillet with a lid immediately. Reduce heat to medium-low and steam for about 8–10 minutes.
  13. Check doneness by inserting a fork into a dumpling; if filling is hot and wrapper is translucent, they’re ready.
  14. For extra crispiness, remove the lid and cook for another minute or two until water evaporates completely.
  15. Serve immediately with your choice of dipping sauce.
