  • 1 (12 oz) can evaporated milk
  • 1 (32 oz) quart chicken stock
  • 4 cups shredded cooked chicken
  • Fresh thyme, black pepper, salt
  • 2 cups all-purpose flour for dumplings
  • 1 tablespoon, plus 1 teaspoon baking powder for dumplings
  • 1 teaspoon freshly cracked black pepper for dumplings
  • 1 teaspoon salt for dumplings
  • 1 tablespoon fresh thyme for dumplings
  • 3/4 cup (6 oz) whole milk for dumplings
  • 4 tablespoons melted butter for dumplings

Instructions

  1. Sauté the onion, carrots, celery in melted butter until softened. Add garlic and cook briefly.
  2. Stir in flour to create a roux, then gradually mix in evaporated milk and chicken stock until smooth.
  3. If using raw chicken, add an extra cup of broth and simmer until cooked through; shred it before returning it to the pot. For pre-cooked chicken, boil briefly with seasonings.
  4. Mix dumpling ingredients in a bowl until just combined.
  5. Drop spoonfuls of the dumpling mixture into the simmering soup and cover tightly. Cook undisturbed for about 15 minutes until fluffy.
