  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups powdered sugar
  • 4 tablespoons caramel sauce (plus extra for drizzling)
  • 12 tablespoons milk or heavy cream

Instructions

  1. Preheat oven to 350°F (176°C) and line a cupcake pan with liners.
  2. Whisk together flour, baking powder, cinnamon, nutmeg, and salt in one bowl.
  3. In another bowl, beat softened butter, vegetable oil, granulated sugar, and brown sugar until fluffy.
  4. Mix in vanilla extract and sour cream. Add eggs one at a time, mixing well.
  5. Combine wet and dry ingredients alternately with milk until just mixed; fold in chopped apples.
  6. Fill cupcake liners ¾ full with batter and bake for 15–18 minutes until a toothpick comes out clean.
  7. Cool completely before frosting with caramel buttercream made from butter, powdered sugar, caramel sauce, and milk.
