  • 2 gala apples (peeled and diced)
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons brown sugar (or honey)
  • 2 tablespoons butter (cut into sections)
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup raisins
  • 1/4 cup pecans (or walnuts)
  • 1/4 cup dried cranberries

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine butternut squash, apples, cinnamon, vanilla extract, and brown sugar. Mix until evenly coated.
  3. Add salt and black pepper; mix again.
  4. Pour the mixture into a baking dish with a lid and spread it out evenly.
  5. Distribute chopped butter over the top and cover with the lid; bake for 15 minutes.
  6. Remove from the oven, add raisins, dried cranberries, and pecans; gently toss together.
  7. Cover again and return to the oven for another 15 minutes until tender.
  8. Stir gently before serving warm.
