  • Salt & pepper, to taste
  • 1 tsp lemon juice (optional)
  • 1 cup chopped romaine or mixed lettuce
  • 1 avocado, sliced
  • 1 cup chopped tomatoes
  • 1 cup thinly sliced white onion
  • 1 tsp olive oil
  • 1 tsp lemon juice or vinegar
  • Salt & pepper, to taste

Instructions

  1. Preheat your oven to 180C (350F).
  2. Place the salmon fillet on a baking tray and drizzle with olive oil. Season with salt, pepper, and lemon juice.
  3. Bake for 12-15 minutes until flaky.
  4. In a mixing bowl, combine chopped lettuce, sliced avocado, diced tomatoes, and onion. Dress with olive oil and lemon juice; season to taste.
