  • ¼ cup full-fat sour cream (room temperature)
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • ½ tsp kosher salt
  • 1 cup powdered sugar (sifted)
  • 3 tbsp milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, toss chopped apples with cinnamon. In another bowl, whisk together flour, baking soda, salt, ginger, and brown sugar.
  3. In a separate bowl, combine the egg, granulated sugar, vegetable oil, sour cream, and vanilla until smooth.
  4. Gradually mix the dry ingredients into the wet mixture until just combined. Fold in spiced apples gently.
  5. Pour batter into the prepared loaf pan and bake for about 55 minutes or until a toothpick comes out clean.
  6. Cool for 10 minutes before transferring to a wire rack. To prepare glaze, whisk powdered sugar with milk and vanilla until smooth, then drizzle over cooled bread.
